This could work really well for running a "living dungeon", as has been discussed for a while now; basically expanding Philotomy's "Mythic Underworld" so that the dungeon is not just an alternate reality where normal reality gets warped in weird ways, but the dungeon itself is a living, malevolent thing and its monsters a sort of antibody against invaders.
These tables would be a great way to generate a slew of unique horrors to use as the spawn of that sort of living dungeon, as it births legions of monstrosities with which to repel the adventurers..
